Chicken Fajita Quesadillas
- 1 large chicken breast
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 medium red bell peper, in strips
- 1/2 onion, in strips
- 1/2 fresh serrano pepper, in strips
- 4 6-inch multigrain tortillas
- 1/2 cup shredded Monterey Jack cheese
- 1 tbsp cilantro
Instructions:
- In a large skillet, heat lime juice & oil over medium heat.
- Slice chicken breast into long strips.
- Add chicken breasts to medium heat and cook for 8 minutes/
- Set chicken aside.
- In the same skillet, heat bell pepper, onion and serrano pepper for 5 minutes. Add chicken.
- Cook for another 5 minutes, set aside.
- In a different skillet, heat over medium heat.
- Lay tortilla down & half the cheese.
- Top with chicken and vegetable micture then add the other half of cheese and cilantro. Lay remaning tortilla on top.
- Flip quesadilla once cheese has started to melt and both sides are browned.

Very easy to make and tasty.
