Crispy Quinoa Bites
Ingredients
- 2 cups cooked quinoa (cooled)
- 2 eggs
- ¾ cup grated cheese (mozzarella or cheddar or marble)
- ½ cup parmesan cheese
- 1 cup shredded carrot
- 1 clove garlic, minced
- ¼ cup chopped cilantro
- 2 tbsp flour
- ½ tsp seasoning salt
- pepper
Instructions
- Cook quinoa according to the directions on the package (typically 2 cups water for 1 cup quinoa, bring water to a boil for 15 minutes)
- Let the quinoa cool, stick in fridge. Preheat your oven to 375 degress.
- Lightly whisk eggs.
- Add cheese, carrot, garlic, cilantro, flour, seasoning salt, and pepper and mix well. (Mixture will be lumpy, clumped together.)
- Line a 11x17 baking sheet with parchment paper
- Using about 1 tbsp, gather spoonfulls of the quinoa mixture.
- Roll it into a ball then slightly squish, onto baking sheet.
- Place balls about 1 inch apart.
- Bake for 25 minutes. If you want them crispier, bake for 30 minutes.
